Family Recipe Friday: Applecake
My mother made the most delicious apple cake. It is easy to make, and when my husband and I went to the US, I took the recipe with me. I made the cake for most birthdays and other family gatherings. While I am not so much into baking anymore, now my son is the keeper of the apple cake recipe.
So here it is (for some reason we always made enough for two cakes)
3 1/2 cups of all purpose flour
3 sticks of butter
1 cup of sugar
1 egg
apples (My mother used Goudreinets, a rather tart cooking apple, that I have not been able to find in the US. I use MacIntosh, and I reduce the sugar to about a 1/2 cup. The beauty of this cake is that it is not too sweet)
Cut the butter into the dry ingredients. Add the egg, and knead until the dough forms a firm ball. Divide the ball into three parts: two parts are for the bottoms, and 1 part for the tops (divide this into two).
Butter and flour two spring form pans. Take one ball of dough and flatten it into the bottom of the pan, and up the sides. Cut the peeled and quartered apples into the pan until about halfway up the sides. Sprinkle cinnamon on the apples, and fill the pan with more apples slices.
Roll out top ball, and cut into strips. Make a lattice on top of the cake. Brush with some beaten egg. Bake at 350 for about an hour, or until the lattice looks nice and brown. Let stand at least overnight before serving. Enjoy!
If you don’t want to make two cakes, you can freeze half the dough, and use it later.
